Dang, man, TimeScarcity is hella stressful. Especially when someone comes at you and expects them to help them with X and to do so within the ("short") time frame that they have in mind, often already stressing about it as well.
A key coping skill that I've developed in such cases is to mentally step back and consider whether the thing truly needs to be done within the time frame implied/provided/assumed. It has been helpful to recognize that I'm starting to get stressed out and realize that it's being caused by an (often dubious) assumption of that X needs to be done within time A.
